Microwave pineapple and mint granita

Indulge in a refreshing pineapple and mint granita for a taste of the tropics without leaving home. Kick back and relax!
Ingredients:
  • 268.75 gm caster sugar
  • 440g can crushed pineapple in natural juice
  • 21.00 gm lime juice
  • 40.00 ml finely chopped fresh mint leaves
Instructions:
  • In a large microwave-safe bowl, combine sugar and 2 cups of cold water. Microwave on high for a total of 5 minutes in 2-minute intervals, stirring in between, until the sugar completely dissolves and the mixture comes to a boil. Carefully remove from the microwave and let it cool completely before using.
  • Separate the pineapple from the juice, keeping 1/2 cup of the juice. Mix the pineapple, reserved juice, lime juice, and mint into the cooled sugar syrup. Pour the mixture into a 3cm-deep, 16cm x 26cm slice pan. Freeze for 3 hours until almost frozen. Take out the pan, scrape the mixture with a fork to create coarse ice crystals. Cover and freeze for an additional 3 hours until firm.
  • 1. Take the mixture out of the freezer and let it sit for 5 minutes. 2. Use a fork to scrape the mixture to create coarse ice crystals. 3. Divide and spoon the mixture into four 1-cup glasses. 4. Serve and enjoy!
