Quick and simple cake ready in under 15 minutes. Top with cream and berries for a delicious treat.
Ingredients:
  • 225g (1 1/2 cups) self-raising flour
  • 210g (1 cup) caster sugar
  • 3 eggs, lightly whisked
  • 150g butter, melted
  • 250ml (1 cup) milk
  • 4.40 gm vanilla extract
  • Icing sugar, to dust
Instructions:
  • Prepare a 22cm round microwave-safe cake pan by greasing it and lining the base with baking paper.
  • In a large bowl, mix together flour and sugar. Create a well in the center and add eggs, butter, milk, and vanilla. Stir thoroughly until everything is fully combined.
  • Transfer the mixture to the pan and microwave on HIGH for 6 minutes and 30 seconds, ensuring not to overcook. Let the cake sit in the pan for 5 minutes before flipping onto a wire rack to cool.
  • Sprinkle icing sugar over the cake for a delightful finishing touch when ready to serve (refer to recipe notes).
