Decadent mocha brownies with rich coffee frosting for a gourmet twist on a classic favorite.
Ingredients:
  • 0.5 cup shortening
  • 2 cups white sugar
  • 4 teaspoons instant coffee granules, or more to taste
  • 1 tablespoon hot water
  • 4 large eggs
  • 1 cup all-purpose flour
  • 2 teaspoons vanilla extract
  • 0.5 cup butter, softened
  • 2 cups confectioners' sugar
  • 1 tablespoon instant coffee granules
  • 1.5 tablespoons milk
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease a 9x13-inch baking pan.
  • Melt shortening and butter in a small pan over low heat. Pour the melted mixture into a mixing bowl and stir in cocoa until well combined. Add sugar and mix thoroughly.
  • In a small bowl, dissolve instant coffee with hot water and stir into cocoa mixture. Add eggs to the batter one at a time, beating well after each addition. Gently mix in flour, vanilla extract, and salt until just moistened. Pour the batter into the prepared baking pan.
  • Bake until a toothpick inserted in the center comes out with moist crumbs, about 25-30 minutes. Allow to cool completely.
  • Prepare a delicious frosting by combining softened butter and vanilla extract in a bowl. Mix in confectioners' sugar until creamy using an electric mixer on medium speed. Dissolve instant coffee in milk in a separate bowl, then add to the frosting. Increase mixer speed to high and beat until light and fluffy for 3 to 5 minutes. Finally, generously frost the cooled brownies.
