Mocha chocolate brownies

Bake indulgent espresso-infused brownies for a gourmet treat.
Ingredients:
  • 400.00g good-quality dark chocolate, broken into pieces
  • 125g butter
  • 180.00 gm brown sugar
  • 75.08 gm light olive oil
  • 3 eggs, lightly beaten
  • 40.00 ml strongly brewed espresso coffee
  • 125.00 ml plain flour
  • 2.00 gm baking powder
  • 32.50 gm cocoa powder
  • 1 litre vanilla ice-cream, to serve
  • 200ml thickened cream
Instructions:
  • Preheat your oven to 180°C. Grease a 3cm-deep 16cm x 25cm slab pan and line it with baking paper, leaving a 2cm overhang on both long sides.
  • In a large microwave-safe bowl, combine chocolate and butter. Microwave on medium (50%) for 1 minute or until almost melted. Stir until smooth. Add brown sugar, oil, eggs, and coffee, stirring well to combine.
  • Sift together flour, baking powder, and cocoa over the chocolate mixture. Gently fold with a large metal spoon, being careful not to over-mix. Pour into the prepared pan, bake for 40 minutes until the top cracks, then let it rest for 30 minutes before serving.
  • To make the chocolate sauce, blend the chocolate and cream in a microwave-safe bowl. Microwave at medium (50%) power for 1 to 2 minutes or until the chocolate is nearly melted. Stir until smooth.
  • Cut the brownies into bite-sized pieces and arrange them in elegant serving bowls. Add a generous scoop of velvety ice cream on top of the brownies and artfully drizzle with rich chocolate sauce. Present and enjoy this indulgent treat.
