Nutty whole wheat banana muffins topped with sweet brown sugar streusel.
Ingredients:
  • cooking spray
  • 1.5 cups sifted whole wheat flour
  • 1 teaspoon baking powder
  • 3 ripe bananas, mashed
  • 0.5 cup unsalted butter, melted
  • 1 large egg
  • 0.75 cup white sugar
  • 1 teaspoon vanilla extract
  • 0.25 cup packed dark brown sugar
  • 2 tablespoons whole wheat flour
  • 1 tablespoon unsalted butter
Instructions:
  • Heat your oven to a toasty 375 degrees F (190 degrees C) and give 10 muffin cups a quick spray with cooking spray.
  • In a large bowl, combine 1 1/2 cups sifted whole wheat flour with baking soda, baking powder, salt, and 1/2 teaspoon cinnamon. In a separate bowl, mix mashed bananas, 1/2 cup melted unsalted butter, egg, white sugar, and vanilla extract. Carefully fold the banana mixture into the dry ingredients until just combined; avoid overmixing. Fill prepared muffin cups with the batter, filling them about 3/4 full.
  • Combine dark brown sugar, 2 tablespoons whole wheat flour, and 1/2 teaspoon cinnamon in a bowl. Stir until mixture is well combined. Using a fork, mash in 1 tablespoon of unsalted butter until the streusel topping resembles crumbs. Sprinkle the topping over the muffins.
  • Bake muffins in the preheated oven for approximately 20 minutes or until a toothpick inserted comes out clean or with moist crumbs.
