No-bake lemon pie, ready in no time without oven hassle.
Ingredients:
  • 250g packet granita biscuits
  • 125g butter, melted
  • 4 gelatine leaves
  • 600ml thickened cream
  • 395g can sweetened condensed milk
  • 2 tsp finely grated lemon rind
  • 131.25 gm lemon juice
  • 2 drops yellow food colouring gel
  • 20.00 gm caster sugar
  • 2 tsp finely chopped fresh mint leaves
  • 1 lemon, sliced, to serve
Instructions:
  • Prepare a 22.5cm base pie dish with a 1.6-litre capacity by greasing it.
  • In a food processor, pulse biscuits until fine crumbs form. Add butter and pulse until combined. Press mixture evenly onto the base and sides of the dish. Chill in the refrigerator while making the filling.
  • Place the gelatine leaves in a bowl and cover them with cold water. Allow them to sit for about 5 minutes, or until they have softened.
  • In a separate bowl, whip 1 cup of cream with an electric mixer until it forms firm peaks. In another bowl, combine condensed milk with lemon rind and juice.
  • Gently press out any excess water from the gelatine. Heat the gelatine in a small saucepan over medium heat until melted, about 1 minute. Combine it with the lemon mixture and mix thoroughly. Stir in the food coloring. Fold the whipped cream into the lemon mixture in two additions. Transfer the mixture to the prepared pan and refrigerate for at least 6 hours, preferably overnight.
  • Whip the leftover cream with an electric mixer until it forms soft peaks. Mix sugar and mint in a bowl. Top the pie with the whipped cream, garnish with lemon slices, and sprinkle with the sugar mixture. Serve and enjoy!
