Oatmeal & cheddar biscuits

Whip up quick and cheesy biscuits with just 9 ingredients. Pair with quince paste for a perfect appetizer for guests.
Ingredients:
  • 100g (3/4 cup) natural oat bran (Lowan brand)
  • 150g (1 cup) plain flour
  • 55g (1 cup) finely shredded cheddar
  • 0.63 gm bicarbonate of soda
  • 0.60 gm salt
  • 50g butter, melted
  • 100.00 gm water
  • 200g blue cheese (King Island brand), to serve
  • Quince paste, to serve
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays with non-stick baking paper.
  • Mix together oat bran, flour, sharp cheddar cheese, baking soda, and salt in a bowl.
  • In a medium saucepan over medium heat, melt the butter with water until smooth. Let it cool for 15 minutes. Gradually mix into the oat-bran mixture until fully combined.
  • Transfer the dough onto a lightly floured surface and knead it gently until smooth. Roll out the dough to a thickness of about 5mm using a lightly floured rolling pin. Cut out 16 squares using a 7cm pastry cutter. Arrange the squares on lined trays and prick them with a fork. Bake in the oven for 25-30 minutes until they turn golden brown.
  • Allow the biscuits to cool on a rack before serving alongside blue cheese and quince paste.
