Goober Cookies: Chewy caramel, nuts, and chocolate. Irresistibly delicious for a next-day treat!
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 1 cup quick cooking oats
  • 0.75 cup packed brown sugar
  • 0.75 cup melted butter
  • 6 ounces semisweet chocolate chips
  • 0.5 cup chopped walnuts
  • 0.75 cup caramel ice cream topping
  • 3 tablespoons all-purpose flour
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x9 inch square pan.
  • Mix together 1 cup flour, baking soda, oats, brown sugar, salt, and melted butter until crumbly. Press half of the mixture into the prepared pan.
  • Preheat oven to 350°F (175°C) and bake for 10 minutes.
  • Allow to cool briefly before generously scattering the chocolate chips and chopped nuts over the crust. Combine the caramel ice cream topping with 3 tablespoons of flour, then elegantly drizzle it over the chocolate chips. Finish by topping it off with the remaining oatmeal mixture, breaking it into small pieces for even coverage.
  • Bake at 350°F (175°C) for 15 minutes until golden brown. Allow bars to cool completely before slicing into perfect squares.
