Delicious oatmeal pancakes topped with flavorful apple-maple sauce for a crowd-pleasing breakfast.
Ingredients:
  • 3 apples, cored and diced
  • 0.5 cup water
  • 1 orange, juiced
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon, or more to taste
  • 0.5 cup maple syrup
  • 1.5 cups all-purpose flour
  • 0.5 cup quick-cooking oats
  • 1 egg
  • 2 tablespoons coconut oil
  • 2 teaspoons vanilla extract
  • 1 packet sucralose sugar substitute (such as Splenda®)
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
Instructions:
  • In a small pot, bring apples, water, and orange juice to a boil, then lower the heat. Stir in vanilla extract and cinnamon. Simmer and stir occasionally until apples are light golden and most liquid is absorbed, about 20-25 minutes. Mix in maple syrup and simmer on low heat.
  • Combine flour, oats, milk, egg, coconut oil, 2 teaspoons vanilla extract, sucralose, baking powder, and salt in a bowl, and beat until the batter is just combined.
  • Preheat a lightly oiled griddle over medium-low heat. Pour batter onto the griddle using a large spoon. Cook until bubbles form and edges are dry, about 3 to 5 minutes. Flip and cook until golden brown on the other side, about 3 to 4 minutes. Repeat with the rest of the batter. Serve the pancakes with warm apple-maple sauce.
