Delicious oat spice cake topped with coconut-pecan frosting.
Ingredients:
  • 1.5 cups boiling water
  • 1 cup quick-cooking oats
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground nutmeg
  • 0.5 teaspoon ground cloves
  • 1 cup packed dark brown sugar
  • 3 tablespoons butter
  • 0.75 cup packed dark brown sugar
  • 3 tablespoons milk
  • 1 egg
  • 0.75 cup flaked coconut
  • 0.5 cup chopped pecans
Instructions:
  • - Preheat oven to 350°F (175°C). Grease and flour a 9-inch square pan. - In a medium bowl, mix boiling water with oats. Allow to sit for 40 minutes. - Sift together flour, baking soda, cinnamon, nutmeg, and cloves. Keep it aside.
  • Cream together 1/2 cup butter, 1 cup brown sugar, and 1 cup white sugar in a large bowl until light and fluffy. Add eggs one at a time, then mix in vanilla. Stir in the oats, followed by gradually mixing in the flour mixture. Pour batter into prepared pan.
  • Place the cake in the preheated oven for 50 minutes, or until a toothpick inserted in the center comes out clean. Meanwhile, start preparing the topping.
  • Start by combining the luscious butter and rich brown sugar in a medium bowl until it's velvety smooth. Then, whisk in the egg and milk to create a heavenly mixture. Gently fold in the coconut and pecans for a delightful crunch. Spread this decadent topping over your warm cake, then bake it until it gleams with a golden hue. Finally, let it cool and simply slice it into delectable squares.
