Crispy fried okra salad with bacon, onion, tomato, and tangy vinegar dressing. An easy year-round delight with frozen okra.
Ingredients:
  • 3 slices bacon
  • 1 (16 ounce) package frozen cut okra
  • 1 green bell pepper, seeded and diced
  • 1 medium tomato, diced
  • 0.33333334326744 cup white sugar
  • 0.25 cup corn oil
  • 0.25 cup white vinegar
Instructions:
  • In a large skillet over medium heat, cook bacon until evenly browned. Remove to paper towels to drain. Leave a thin coating of bacon grease in the pan. Add okra to the skillet and fry until tender, about 5 minutes. Transfer okra to a salad bowl and mix with onion, green pepper, tomato, and crumbled bacon.
  • Combine sugar, corn oil, and vinegar in a small bowl and whisk until sugar dissolves. Pour the dressing over the salad, toss well to coat, and refrigerate for 30 minutes before serving.
