Comforting, versatile old-fashioned potato soup recipe. Creamy base with options for cauliflower, broccoli, or vegetarian version.
Ingredients:
  • 0.25 cup butter
  • 1 large onion, chopped
  • 6 potatoes, peeled and diced
  • 2 carrots, diced
  • 3 cups water
  • 2 tablespoons chicken bouillon powder
  • ground black pepper to taste
  • 3 tablespoons all-purpose flour
  • 3 cups milk
  • 1 tablespoon dried parsley
  • 0.25 teaspoon dried thyme
Instructions:
  • In a saucepan over medium heat, melt the butter until sizzling. Add the onion and sauté until it becomes soft and translucent, approximately 5 minutes.
  • Once the onions are being cooked to perfection, combine diced potatoes, carrots, water, and chicken bouillon in a separate pot, then bring to a boil. Cook until veggies are tender, approximately 10 minutes. Be mindful not to overcook. Lastly, season with ground black pepper to your liking.
  • Create a velvety paste by adding flour to the cooked onions. Stir and cook for 2 minutes. Slowly pour in milk and mix thoroughly. Cook over gentle heat, stirring constantly until warmed. Mix in the potato and carrot blend. Stir in parsley and thyme, then heat everything through. Serve piping hot.
