One-Pot Ham and Veggie Pasta

Creamy one-pot pasta with leftover ham: cozy and quick weeknight dinner.
Ingredients:
  • 1 tablespoon olive oil
  • 2.5 cups cubed fully cooked ham
  • 0.5 cup chopped onion
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon red pepper flakes
  • salt and pepper to taste
  • 4 cups low-sodium chicken broth
  • 1.25 cups fat free half-and-half
  • 0.25 cup all-purpose flour
  • 1 (16 ounce) package farfalle (bow tie) pasta
  • 2 cups frozen peas and carrots
  • 0.5 cup grated Parmesan cheese
  • chopped parsley for garnish
Instructions:
  • In a large pot over medium heat, warm up olive oil. Add ham and onion, saute for 3 minutes. Add garlic, cook for 30 seconds until fragrant. Stir in Italian seasoning, red pepper flakes, salt, and pepper; cook for 2 minutes.
  • Combine chicken broth, half-and-half, and flour, whisking until smooth. Pour the mixture into the pot and stir in farfalle pasta. Cover and cook for 15 minutes.
  • Toss in peas and carrots and simmer until pasta is tender, approximately 8 minutes. Blend in Parmesan cheese and sprinkle with chopped parsley. Enjoy promptly.
