Delicious Taco Rice with beef, beans, tomatoes, and corn for a flavorful one-pot Mexican meal everyone will enjoy.
Ingredients:
  • 0.5 onion, diced
  • 1 pound ground beef
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cups beef broth
  • 1 cup frozen corn
  • 1 (6 ounce) package Knorr® Fiesta Sides™ - Taco Rice
  • 1 tablespoon buttery spread
  • 0.5 cup shredded cheese, or more to taste
  • 0.5 cup sour cream, or more to taste
Instructions:
  • In a heavy pot over medium heat, cook onions and ground beef until beef is browned and crumbled and onions start to turn translucent, about 5 minutes. Remove excess grease from pot.
  • 1. Pour beef broth into the pot, then add beans, tomatoes, corn, and Knorr® Fiesta Sides - Taco Rice. Stir in a knob of buttery spread. Let it come to a boil. Reduce heat, cover, and simmer until the rice is tender, about 7 minutes.
  • Take the pot off the heat and let it rest for at least 2 minutes. Stir the dish, then serve with shredded cheese and sour cream on top.
