Make delicious one-pot taco pasta: cook seasoned ground beef, veggies, and pasta together, then top with melted cheese. Perfect for a stress-free family dinner!
Ingredients:
  • 1 tablespoon olive oil
  • 1 white onion, chopped
  • 1 pound lean ground beef (12 ounces if using Impossible Meat)
  • 2 tablespoons homemade taco seasoning or 1 (1-ounce) packet taco seasoning
  • 1 teaspoon smoked or sweet paprika
  • 1 teaspoon ground cumin
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (4-ounce) can chopped green chilis
  • 8 ounces elbow pasta
  • 2 cups beef or vegetable broth
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 tablespoon hot sauce, optional
  • Salt, as needed
  • Optional toppings
  • Green onions, chopped
  • Sour cream
  • Lime wedges
Instructions:
  • Cook the vegetables and ground beef in a large pot over medium-high heat with olive oil. Sauté chopped onion and bell pepper until softened, about 2 minutes. Add ground beef, breaking it up with a wooden spoon. Cook until most of the pink is gone, about 3 to 5 minutes. Remove excess grease if preferred. For plant-based meat, cook for 2 to 3 minutes.
  • Combine the taco seasoning, paprika, and cumin with the canned tomatoes and green chilis, keeping the liquids. Stir until mixed well. Add the dry pasta, ensuring it's coated evenly. Pour in the beef broth, stir, and raise the heat to medium-high. Bring to a boil in 3 to 5 minutes.
  • Simmer the pasta: After bringing it to a boil, lower the heat, cover with a lid, and simmer for 13 to 15 minutes. Stir occasionally for even cooking.
  • Incorporate the cheese, cilantro, and lime: Remove from heat and gently blend in the shredded cheddar cheese until melted. Add chopped cilantro, fresh lime juice, and hot sauce (optional). Season with salt to taste. Allow to rest for 3 to 5 minutes to thicken before garnishing with scallions, sour cream, and lime wedges, if preferred. Enjoy!
