Cheesy one-pot taco spaghetti - a creamy and easy family favorite for busy weeknights.
Ingredients:
  • 4 tablespoons dry taco seasoning mix
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  • 1 pound 80% lean ground beef
  • 1 (16 ounce) package dry spaghetti
  • 1 (32 ounce) container chicken broth
  • 1 cup water
  • 1 (10.5 ounce) can cream of chicken soup
  • 0.25 (8 ounce) package processed cheese food (such as Velveeta®), thinly sliced
Instructions:
  • In a pot over medium heat, warm up olive oil; add in diced onion, taco seasoning, garlic powder, and paprika. Sauté for 2 minutes, stirring occasionally.
  • Add the diced tomatoes with green chilies and sauté for 3 minutes, stirring occasionally.
  • Add in the ground beef and cook until it's slightly more than halfway cooked through, breaking it into small pieces as you go, for about 5 minutes.
  • Break spaghetti noodles in half for easy serving and add to the pot. Pour in flavorful chicken broth and fresh water. Bring to a lively boil and cover with a lid to lock in the delicious flavors.
  • Cook pasta until perfectly al dente, about 7 to 12 minutes. Stir in cream of chicken soup and simmer for 5 minutes. Lower heat and melt shredded Cheddar cheese into the mixture.
  • Place a slice of Velveeta® cheese on each serving, arranging 4 slices around the outside and 1 slice in the center.
  • Remove from heat and cover the pot to allow the cheese to melt. Serve hot.
