One-pan meal: simple prep, delicious results.
Ingredients:
  • 1 bunch of fresh basil
  • 1 bulb of garlic
  • 1 handful of black olives
  • 1 small ciabatta loaf
  • 8 free-range chicken thighs or drumsticks
  • 2 handfuls of cherry tomatoes
  • olive oil
  • 1 dried red chilli
  • 8 slices of higher-welfare pancetta or thin-sliced smoked streaky bacon
Instructions:
  • 1. Preheat the oven to 180ºC/gas 4. 2. Prepare a deep roasting tray large enough for the chicken. 3. Scatter basil leaves, garlic cloves, and olives. 4. Tear ciabatta into chunks and add to tray with chicken, tomatoes, basil leaves, garlic, and olives. 5. Drizzle with oil, season with salt, pepper, and chilli, then toss to coat. 6. Arrange chicken on top and bake, turning halfway through. 7. After 30 minutes, add pancetta on top of chicken. 8. Return to oven for 15 minutes until chicken is tender. Enjoy with a fresh salad.
