Orange & almond whoopies

Whip up a lavish orange buttercream for irresistible whoopie pies.
Ingredients:
  • 250.00g butter, at room temperature
  • 80g (1/2 cup, lightly packed) brown sugar
  • 100g (1/2 cup) caster sugar
  • 4.40 gm vanilla extract
  • 1 egg
  • 55g (1/2 cup) almond meal
  • 2.50 gm bicarbonate of soda
  • 300g (2 cups) plain flour
  • 330ml (1 1/3 cups) buttermilk
  • 20.00 ml grated orange rind
  • 230g (1 1/2 cups) icing sugar mixture
  • 30.90 gm milk
  • 1 egg white
  • 250g pure icing sugar, sifted
  • 7.95 gm fresh orange juice
  • Red and yellow food colouring
Instructions:
  • 1. Preheat your oven to 190°C and line 2 baking trays with non-stick baking paper. 2. In a bowl, use an electric beater to cream together the butter, sugar, and vanilla until pale and creamy. 3. Add the egg and continue to beat until well combined.
  • Combine the almond meal and bicarbonate of soda by gently stirring. Use a metal spoon to carefully incorporate the flour and buttermilk in alternating batches until the mixture is just smooth and slightly stiff.
  • Scoop mixture onto trays using a 3cm-diameter ice-cream scoop, leaving 5cm of space between each round for spreading. Use your finger to smooth the edges of the mixture.
  • Bake for 10 minutes or until firm, switching trays halfway through. Let cool slightly, then transfer to a wire rack to cool completely. Repeat with remaining batter in 2 more batches.
  • For orange glacé icing: Beat the egg white until frothy in a large bowl. Slowly mix in the icing sugar until it's smooth and glossy. Stir in the orange juice until the consistency is spreadable. Mix in 1-2 drops each of red and yellow food coloring until it's a pale orange shade.
  • In a bowl, whip together butter and icing sugar until smooth. Mix in orange zest and milk until well combined.
  • Fill a piping bag, fitted with a 1cm round nozzle, with the filling. Pipe a dollop over one half of the whoopie bases, then pipe the buttercream on the other half.
  • Place the remaining whoopie pies on top, gently pressing together to create sandwiches. Spread the tops with the orange glaze icing, then garnish with orange rind.
