Orange & cinnamon creamed rice

Ingredients:
  • 110g rice
  • 750ml soy milk
  • 75g raw sugar
  • 1 cinnamon stick
  • 1 tsp grated orange rind
  • Sliced strawberries, to serve
Instructions:
  • Rinse the rice in a sieve under cold running water. In a large saucepan, combine soy milk and sugar. Stir over low heat until the sugar dissolves. Bring the milk to a boil, then add the rice and stir.
  • Bring the mixture back to a boil, then lower the heat. Introduce the cinnamon stick and orange rind. Let it simmer, stirring occasionally, for 40-50 minutes until the liquid is absorbed and the rice is tender.
  • Discard cinnamon stick and garnish with fresh strawberries.
