Tender sirloin kabobs with sweet orange and pineapple, served over fluffy white rice.
Ingredients:
  • 0.75 cup plain yogurt
  • 0.25 teaspoon cayenne pepper
  • 1 teaspoon minced fresh ginger root
  • 2 teaspoons grated orange zest
  • 1 pound top sirloin, cut into 1-inch cubes
  • 1 large red onion, cut into wedges
  • 2 large red bell peppers, cut into 2 inch pieces
  • 2 tablespoons olive oil
  • 1.5 cups 1-inch fresh pineapple cubes
  • 1 large navel orange, peeled, sectioned
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 1 tablespoon rum
Instructions:
  • Mix yogurt, cayenne pepper, ginger, orange zest, and sirloin cubes in a large freezer bag, ensuring the beef is well coated. Chill in the refrigerator for a minimum of 2 hours.
  • Prepare the grill for medium heat and lightly oil the grate. Take the beef out of the freezer bag and shake off excess marinade. Skewer onion, red pepper, and marinated beef cubes, then brush with olive oil before grilling.
  • In the center of a large piece of heavy-duty aluminum foil, arrange the pineapple and oranges. Top with butter, brown sugar, and rum. Seal the foil tightly, making a packet. Grill the fruit packets covered for 10 minutes.
  • Grill the kabobs with the fruit, turning occasionally, until the meat reaches your desired doneness and the fruit is tender and glazed, approximately 10 minutes.
