Try our mouthwatering oven-roasted Moroccan salmon for a flavor-packed dinner the whole family will enjoy!
Ingredients:
  • 36.40 gm olive oil
  • 20.00 ml mild Moroccan seasoning
  • 42.00 gm lemon juice
  • 6 x 150g fresh Atlantic salmon portions (skin on), deboned
  • 1 lemon, quartered length-ways
  • Rice bran oil spray
  • 40.00 ml flat-leaf parsley, chopped
  • 250g hommus, to serve
Instructions:
  • Combine oil, seasoning, and lemon juice in a jug until fully mixed. Lay salmon flat in a ceramic dish. Pour marinade over salmon, making sure to coat both sides. Cover and chill in the refrigerator for 30 minutes.
  • Preheat your oven to 200C (180C fan-forced) while you line the base of a large heavy-based roasting pan with baking paper. Nestle the salmon, skin-side down, in the pan with lemon wedges. Give everything a light mist of rice bran oil for a perfect roast.
  • Roast the salmon for 12-14 minutes, adjusting for thickness, until it is perfectly cooked. Drizzle the salmon with the lemon juice from the hot wedges, sprinkle with parsley, and serve with hommus.
