Oysters with chorizo & basil dressing

Indulge in fresh oysters with spicy chorizo and zesty basil dressing.
Ingredients:
  • 1 chorizo sausage, finely chopped
  • 24 Pacific oysters, in the half shell
  • Basil dressing
  • 80ml (1/3 cup) olive oil
  • 40.00 ml balsamic vinegar
  • 82.50 ml loosely packed coarsely chopped fresh basil
  • 2 green shallots, ends trimmed,finely chopped
  • 1 garlic clove, crushed
  • Salt & freshly ground black pepper
Instructions:
  • Combine oil, vinegar, basil, green shallot, and garlic in a jug. Whisk until thoroughly mixed. Season with salt and pepper to taste.
  • Preheat a small non-stick frying pan over medium heat. Cook the chorizo, stirring occasionally, for 3 minutes until crispy. Remove from heat.
  • Place the oysters elegantly on a large serving platter, generously top them with chorizo, and then delicately drizzle them with fragrant basil dressing. Enjoy immediately.
