Try making easy slice-and-bake cookies for a faster baking experience!
Ingredients:
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1/4 cup shortening
  • 1 egg
  • 1 1/2 cups Original Bisquick™ mix
  • 1/3 cup strawberry jam or preserves
Instructions:
  • Preheat oven to 375°F. Combine sugars, peanut butter, shortening, and egg in a large bowl. Use an electric mixer on low speed for 30 seconds, scraping the bowl constantly. Then beat on medium speed for 1 minute, scraping the bowl occasionally. Gently mix in Bisquick until well blended.
  • Roll the dough in Bisquick mix on a floured surface. Divide the dough into 4 parts and shape each into a 13-inch long roll, 3/4 inch in diameter. Space the rolls 2 inches apart on a large ungreased baking sheet.
  • Using the handle of a wooden spoon, create a lengthwise indentation in the center of each roll. Fill a resealable food-storage plastic bag with jam, cut a very small (1/4-inch) tip from one corner of the bag, and evenly squeeze the jam into the indentations.
  • Bake for 9 to 11 minutes until beautifully golden and firm. Let them cool on the cookie sheet for 5 minutes. Slice each roll into 12 pieces and transfer them to a cooling rack.
