PB and J Mini Mug Cakes

Indulge in quick and delicious microwave peanut butter and jelly mug cakes.
Ingredients:
  • cooking spray (such as Pam®)
  • 4 teaspoons Concord grape jelly
  • 0.5 cup yellow cake mix
  • 2 tablespoons creamy peanut butter (such as Peter Pan®)
  • 2 cups whipped cream (such as Reddi-Whip®)
  • 0.25 cup egg substitute (such as Egg Beaters®)
Instructions:
  • Coat the inner surfaces of 4 microwave-safe mugs with cooking spray.
  • Add a perfect teaspoon of grape jelly into each mug.
  • In a bowl, combine cake mix and peanut butter, then mix until smooth. Add whipped cream and egg substitute, and continue whisking until batter is silky. Distribute batter evenly among the mugs.
  • Microwave 1 mug on high for 1 minute and 15 seconds, or until cake is set. Repeat with remaining mugs. Invert each mug onto a plate to release the cakes.
