"Vibrant papaya parfait: a sweet delight!"
Ingredients:
  • 107.50 gm caster sugar
  • 2 makrut lime leaves, bruised
  • 1 star anise
  • 2 (550g each) papaya, peeled, deseeded
  • 250.00 ml reduced fat plain Greek-style yoghurt
  • 40.00 ml pistachio kernels, chopped
Instructions:
  • In a saucepan over medium heat, combine sugar, lime leaves, star anise, and 1/2 cup of cold water. Stir and cook for 3 to 4 minutes until sugar dissolves. Bring to a boil and simmer for 6 to 8 minutes until slightly thickened. Let it cool for 5 minutes, then remove and discard lime leaves and star anise.
  • Cut each papaya into 8 wedges, then place them in 4 glasses. Drizzle the papaya with syrup, top each glass with 1/4 cup of yogurt, sprinkle with pistachios, and serve.
