Indulge kids with creamy peanut butter nice creams sweetened with dates and coconut milk.
Ingredients:
  • 1 banana, peeled, chopped
  • 410ml coconut milk
  • 6 fresh dates, pitted
  • 190g peanut butter
  • Pinch of salt
  • 40.00 ml cacao powder
  • Melted dark chocolate, to drizzle
  • Chopped peanuts, to decorate
Instructions:
  • Combine banana, coconut milk, dates, peanut butter, and salt in a blender or food processor. Blend until creamy. Divide the mixture evenly into two bowls.
  • Stir in cacao powder until fully incorporated.
  • Layer the plain and cacao mixtures alternately into ten ⅓-cup (80ml) iceblock moulds. Place iceblock sticks in each mould. Freeze for 6 hours or until firm.
  • Remove ice blocks from the mould. Drizzle with chocolate and sprinkle with peanuts.
