Savory-sweet Chinese peanut butter noodles with a flavorsome sauce featuring peanut butter, honey, soy sauce, and ginger cooked in chicken broth.
Ingredients:
  • 8 ounces Udon noodles
  • 0.5 cup chicken broth
  • 3 tablespoons soy sauce
  • 3 tablespoons peanut butter
  • 1.5 tablespoons minced fresh ginger root
  • 1.5 tablespoons honey
  • 3 cloves garlic, minced
  • 2 teaspoons hot chile paste
  • 0.25 cup chopped green onions
  • 0.25 cup chopped peanuts
Instructions:
  • 1. Boil a large pot of lightly salted water. Cook udon noodles for 10-12 minutes until al dente, stirring occasionally. Drain.
  • In a medium saucepan, blend chicken broth, soy sauce, peanut butter, ginger, honey, garlic, and chili paste. Cook over medium heat, stirring until peanut butter melts and the sauce is heated through.
  • Toss drained noodles in the rich and velvety peanut butter sauce until well-coated. Finish with a sprinkle of fresh green onions and crunchy peanuts for the perfect finishing touch.
