Whip up a delicious vanilla sheet cake, ideal for large gatherings, using only the best ingredients.
Ingredients:
  • cooking spray (such as Baker's Joy™ Non-Stick Release Spray with Flour)
  • 3 cups white sugar
  • 1.5 cups unsalted butter, at room temperature
  • 6 large eggs
  • 2 teaspoons vanilla bean paste
  • 1 teaspoon almond extract
  • 4 cups cake flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon baking soda
  • 1 cup 1% milk
  • 0.25 cup heavy cream
  • 0.25 cup half-and-half
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously spray a 12x18x2-inch cake pan with cooking spray.
  • In a stand mixer bowl, blend sugar and butter until light and fluffy for about 8 minutes. Add eggs one at a time, ensuring to mix thoroughly after each addition and scrape down the sides of the bowl. Stir in vanilla bean paste and almond extract until well combined.
  • In a separate bowl, whisk together cake flour, baking powder, salt, and baking soda. Mix milk, cream, and half-and-half in a measuring cup.
  • Incorporate the sifted cake flour mixture and liquids into the creamed sugar mixture gradually, alternating between the two until fully combined and the batter is smooth. Transfer the batter to the prepared cake pan and cover loosely with foil.
  • Bake in a preheated oven for 45 minutes. Uncover and continue baking until a toothpick inserted into the center comes out clean, approximately 15 minutes more. Allow it to cool on a wire rack for 5 minutes, then gently release the edges with a table knife and flip onto a serving plate. Let it cool completely for about 30 minutes, then frost as desired.
