Indulgent custard pie featuring flavorful Hachiya persimmons.
Ingredients:
  • 1 recipe pastry for a 9 inch single crust pie
  • 0.5 cup white sugar
  • 0.25 teaspoon salt
  • 2 cups half-and-half cream
  • 1 cup persimmon pulp
  • 2 tablespoons butter, melted
  • 1 teaspoon lemon juice
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) with a sheet pan heating up on the lowest rack.
  • In a bowl, blend together eggs, cinnamon, sugar, and salt. Add in cream, persimmon pulp, melted butter, and lemon juice. Transfer the mixture into an unbaked pie shell.
  • After baking on a preheated sheet pan for 10 minutes, lower the oven temperature to 350 degrees F (175 degrees C) and continue baking for an extra 30 minutes, or until the center is nearly set with a slight jiggle. Let it cool completely, then slice and pair with whipped cream, if preferred.
