Puff pastry swirled with pesto and creamy ricotta, creating irresistible pinwheel bites.
Ingredients:
  • 2 sheets puff pastry
  • 2 teaspoons all-purpose flour, or as needed
  • 8.5 ounces ricotta cheese
  • 8.5 ounces pesto
Instructions:
  • Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper, lightly dusting it with flour.
  • Place puff pastry on a smooth surface and cut a 12-inch circle from each sheet. Place one circle onto the baking sheet.
  • Spread a luxurious layer of rich ricotta over one pastry circle, blanket it with a vibrant layer of pesto, then gently place the second pastry circle on top. Finally, nestle a small glass upside down in the center of the circle.
  • Cut the circle away from the glass into 4 equal quarters, then slice each quarter in half, and each eighth in half to create 16 equal strips. Remove the glass. Twist two strips at a time twice in the opposite direction, pinch the ends together, and repeat with the remaining strips to form a pinwheel shape.
  • Bake until the pastry turns golden brown in the preheated oven for 25 to 30 minutes.
