Savory ham balls with a sweet and tangy pineapple glaze made with bacon, ground pork, and flavorful seasonings.
Ingredients:
  • For the meatballs:
  • 1/4 pound bacon, diced
  • 1 pound ham, diced
  • 1 cup breadcrumbs
  • 2 teaspoons dry mustard
  • 2 tablespoon pineapple juice
  • For the glaze:
  • 1 cup pineapple juice
  • 1/2 cup cider vinegar
  • 1/2 cup brown sugar
  • 1 tablespoon ketchup
  • 1/2 teaspoon cayenne, optional
  • 1 teaspoon corn starch mixed with 2 tablespoons cold water
Instructions:
  • Heat your oven to 350°F.
  • Combine the bacon and ham in a food processor and pulse a few times until finely chopped, avoiding over-processing.
  • Prepare the ham ball mixture: Combine all meatball ingredients in a large bowl and mix thoroughly.
  • Shape ham balls: Use your hands to shape meatballs, ranging from 1 to 2 inches in diameter. Smaller balls are ideal for appetizers, while larger ones are great for a main course.
  • Bake: Place the ham balls in a casserole pan and bake at 350°F for approximately 1 hour for 2-inch diameter meatballs, or 30 to 40 minutes for 1-inch diameter meatballs. Aim for an internal temperature of around 165°F.
  • Prepare the glaze by combining all ingredients, except corn starch, in a small pot and bringing it to a boil. Gradually whisk in the corn starch and let it simmer for 1 to 2 minutes.
  • Baste the ham balls with pan juices at 20, 40 (for large meatballs) or at 10 and 20 minutes (for small meatballs), and one last time at 5 minutes before they're done. Serve alone as a party bite or on pineapple slices.
