Make mall-style pretzels at home with pizza dough. Learn from Chef John's simple method!
Ingredients:
  • 0.25 cup all-purpose flour, or more as needed
  • 1 (16 ounce) package refrigerated pizza crust
  • 1 tablespoon cornmeal, or as needed
  • 6 cups water
  • 0.33333334326744 cup baking soda
  • coarse salt
Instructions:
  • Sprinkle flour on a clean work surface. Transfer dough to the floured surface and dust some more flour on top. Knead the dough for 5 to 10 minutes, incorporating about 2 tablespoons of flour until smooth and elastic. Cover with a large bowl and let the dough rest for 15 to 20 minutes at room temperature.
  • Preheat your oven to 400 degrees F (200 degrees C) and line a rimmed baking sheet with parchment paper. Sprinkle with a hint of cornmeal for added crunch and flavor.
  • Fill a deep skillet with water. Whisk in baking soda to make an alkaline bath. Simmer over medium-high heat and maintain a low simmer while shaping the dough.
  • Sprinkle dough with flour as necessary to prevent sticking. Gently flatten and divide into 6 equal pieces. Shape each into a round ball of dough.
  • Flatten each dough ball into a disk, creating a thinner middle and thicker edges. Poke a hole in the center and carefully pull and stretch until you form a round pretzel shape of moderate thickness.
  • Place the pretzels in the simmering alkaline bath, making sure not to overcrowd the pot. Boil each side for about 30 seconds. Using a slotted spoon, transfer the pretzels to the baking sheet. Sprinkle with coarse salt while they are still moist. Allow them to rest for 5 to 10 minutes before baking.
  • Bake on the center rack in preheated oven until golden brown with stretch marks forming, approximately 20 minutes. Times may vary based on the size and shape of the pretzel.
  • Place the pretzels on a wire rack to cool down a bit.
