Plum and soy pork skewers

Ingredients:
  • 350g pork fillet, cut into 2.5 cm cubes
  • 60ml plum sauce
  • 9.60 gm salt reduced soy sauce
  • 1/4 tsp sesame oil
  • 200g vermicelli noodles
  • 1/4 tsp sesame oil, extra
  • 62.50 ml snow pea sprouts, trimmed
Instructions:
  • 1. Preheat your oven to 180°C. 2. Combine plum sauce, soy sauce, and sesame oil in a bowl. 3. Add the pork to the sauce mixture and coat evenly. 4. Cover the bowl with plastic wrap and let it marinate in the fridge for 20 minutes. 5. Soak 8 bamboo skewers in water for 20 minutes.
  • Pat dry the skewers. Thread pork pieces onto each one. Preheat a stove top grill over medium-high heat. Grill the skewers in batches, turning regularly for 5 minutes. Transfer them to an oven tray lined with baking paper and bake for an additional 5 minutes or until fully cooked.
  • While the pork is baking, soak the noodles in a heatproof bowl with hot water for 5 minutes until softened. Drain, mix with extra sesame oil and snow pea sprouts, then serve the skewers on top.
