Extend plum season with this luscious mixed fruit plum conserve made with tart plums, pluots, oranges, raisins, and walnuts.
Ingredients:
  • 7 cups seeded, chopped tart plums (about 3 pounds)
  • 4 cups sugar
  • 1 navel orange (including rind), thinly sliced
  • 1 lemon, (including rind), seeded and thinly sliced
  • 3 1/2 cups raisins
  • 1 cup chopped walnuts
Instructions:
  • Prepare jars for canning: Place jars in a large (12-quart) pot of water on top of a steaming rack to prevent them from touching the bottom. Ensure the water covers the jars by at least 1 inch. Cover the pot, bring to a rolling boil, and boil for 10 minutes. Wash lids in hot, soapy water.
  • Begin cooking the conserve by combining plums, sugar, orange, lemon, and raisins in a large 6 or 8-quart pan. Bring to a boil and simmer gently for 20 to 25 minutes, stirring regularly, until the mixture slightly thickens. Trim any long citrus rinds with kitchen shears and then mix in the walnuts.
  • Ladle conserve into jars, leaving 1/4-inch headspace. Wipe rims clean, secure lids with jar rings. Boil jars in water for 5 minutes, then set aside to cool overnight for a vacuum seal to form.
