Plum sorbet

Ingredients:
  • 8-10 plums
  • 200 g sugar
  • 1 free-range egg white
  • ½ a lemon
Instructions:
  • Quarter the plums and combine with 100g sugar in a large heatproof bowl. Cover tightly with clingfilm and set over a pan of simmering water for about 30 minutes. Strain the plums to extract about 300ml juice. Make a sugar syrup with the remaining sugar and 100ml boiling water. Add 100ml syrup to the plum juice. Beat the egg white until frothy, mix in lemon juice, and fold into the plum mixture. Adjust sweetness with more syrup if needed. Churn in an ice cream maker following the manufacturer's instructions.
