Poached maple pears with cinnamon mascarpone

Elevate poached pears with gourmet cinnamon infusion for a decadent dessert.
Ingredients:
  • 125ml maple syrup
  • 1 vanilla bean, split, seeds scraped
  • 1 cinnamon stick
  • 3 strips lemon zest
  • 21.00 gm lemon juice
  • 4 Corella pears, peeled
  • 250g mascarpone
  • 12.00 gm icing sugar
  • 0.63 gm ground cinnamon
Instructions:
  • In a medium saucepan over medium heat, combine maple syrup, 500ml (2 cups) water, vanilla bean, cinnamon, lemon zest, and lemon juice. Bring to a boil, then lower the heat to medium-low. Add pears to the saucepan and cover them with a round piece of baking paper. Cover the saucepan and simmer for 20 minutes until the pears are tender. Allow the pears to cool before serving.
  • Mix mascarpone, powdered sugar, and cinnamon together in a bowl.
  • Remove the pears from the syrup and transfer them to serving bowls. Heat the syrup over medium heat and simmer for 10-15 minutes until slightly thickened. Remove the vanilla bean, cinnamon stick, and lemon zest. Drizzle the syrup over the pears and serve with cinnamon mascarpone.
