Ingredients:
  • 400g pork fillet, cut into 1cm-thick slices
  • 60.00 ml char siu sauce
  • 270g basmati rice
  • 1 red capsicum, deseeded, cut into thin strips
  • 1 bunch baby choy sum, washed, cut into 3cm pieces
  • 2 tsp grated fresh ginger
  • 2 tsp crushed garlic
  • 21.60 gm hoisin sauce
  • 125.00 ml fresh mint leaves, torn
  • 125.00 ml fresh coriander leaves
  • 65g bean sprout
Instructions:
  • In a bowl, combine the pork slices with 2 tablespoons of the char sui sauce, ensuring they are evenly coated. Allow to marinate for 30 minutes.
  • Prepare the rice according to the package directions until it's tender.
  • Heat half of the oil in a large wok over high heat. Sauté capsicum, choy sum stems, ginger, and garlic for 2 minutes until tender. Add choy sum leaves and stir-fry for 1 more minute. Remove vegetables from the wok. Heat the rest of the oil in the wok, then stir-fry pork for 2-3 minutes until cooked. Add back the vegetables, hoisin, and remaining char sui sauce. Combine well before serving.
  • Portion out the rice and pork stir-fry into individual serving bowls. Finish off with a generous sprinkling of fresh mint, fragrant coriander, and crunchy bean sprouts before serving.
