Whip up a delicious pork salad with veggies and noodles for a speedy and nutritious meal option.
Ingredients:
  • 5.00 gm caster sugar
  • 1 red chilli, seeded, finely sliced
  • 250.00 ml roughly chopped coriander leaves and stalks
  • 20ml (1 tbsp) sesame oil
  • 20ml (1 tbsp) fish sauce
  • 20ml (1 tbsp) light soy sauce
  • 2 limes, juiced
  • 20ml (1 tbsp) peanut oil
  • 20ml (1 tbsp) vegetable oil
  • 400g trimmed pork fillet
  • 1000.00 ml finely shredded cabbage
  • 100g fried egg noodles
  • 6 shallots (spring onions), thinly sliced on the diagonal
  • Sesame seeds, to garnish
  • 100g slivered almonds, roasted
Instructions:
  • Preheat your oven to 180°C.
  • Combine sugar, chili, coriander, sesame oil, fish sauce, soy sauce, lime juice, and peanut oil in a food processor with 2 tablespoons of hot water. Blend until smooth. Keep it aside.
  • Heat vegetable oil in a pan over medium heat, then fry pork until golden for 3-4 minutes. Transfer to a baking tray and bake in the oven for 10 minutes before allowing it to rest.
  • Combine cabbage, noodles, and shallots in a bowl. Toss with half of the dressing. Divide mixture among plates. Thinly slice pork and arrange on top of the salad. Drizzle with remaining dressing. Sprinkle sesame seeds and almonds for garnish.
