Pork and plum stir-fry

Savory pork and plum stir-fry that's sure to impress.
Ingredients:
  • 450g pkt Fresh Hokkein Noodles
  • 500g Pork Extra Trim Fillets, thinly sliced
  • 1 garlic clove, sliced
  • 2cm piece ginger, cut into matchsticks
  • 3 small black plums, stoned, cut into wedges
  • 8.00 gm brown sugar
  • 1/2 red chilli, thinly sliced
  • 1 bunch broccolini, halved horizontally
  • 60ml sweet chilli sauce
  • Spring onions, thinly sliced, to serve
Instructions:
  • Cook the noodles according to the instructions on the package. Drain and then set aside.
  • Heat half of the oil in a hot wok and sear the pork in batches for 2 minutes until lightly browned. Transfer to a plate.
  • 1. Heat the remaining oil over medium-high heat until sizzling. Cook the onion until slightly caramelized, then add the garlic and ginger until fragrant. Introduce plums, sugar, and chili, stirring until plums are slightly caramelized. 2. Bring back the pork into the wok, along with broccolini, sweet chili sauce, and ¼ cup (60ml) water. Stir-fry until pork is cooked through. 3. Add the noodles and gently toss to combine. Serve the stir-fry in bowls, topped with spring onions.
