Tender and flavorful pork chops, ready in no time for a cozy weeknight meal.
Ingredients:
  • 2 tablespoons vegetable oil
  • 4 (1-inch thick) boneless pork chops
  • salt and ground black pepper to taste
  • 0.25 cup all-purpose flour
  • 2 tablespoons butter
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 (10.75 ounce) can cream of mushroom soup
  • 0.5 cup dry cooking sherry
  • 4 ounces shredded mozzarella cheese
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect bake.
  • Heat oil in a hot pan. Season pork chops with salt and pepper, coat in flour, and sear until golden on both sides. Move pork chops to a baking dish.
  • In the same frying pan, melt the butter and sauté the mushrooms until tender, making sure to scrape the bottom of the pan, for 5 to 7 minutes. Season with salt and pepper, then add the mushroom soup and sherry, stirring until the gravy is well mixed.
  • Drizzle the rich gravy over the succulent pork chops in the baking dish and seal with shiny aluminum foil.
  • Bake in the oven until pork chops are cooked through and reach an internal temperature of 145°F (63°C) for about 35 minutes. Remove foil, stir gravy, and sprinkle mozzarella cheese on top of the pork chops.
  • Place back in the hot oven and bake until the cheese is gooey and melted, for an additional 3 to 5 minutes.
