Pork Chops with Creamy Scalloped Potatoes

"Juicy pork chops baked to perfection with creamy scalloped potatoes flavored with thyme and Dijon mustard."
Ingredients:
  • 5 tablespoons butter, divided
  • 6 boneless thick-cut pork chops
  • salt and ground black pepper to taste
  • 2 teaspoons Dijon mustard
  • 2 teaspoons dried thyme
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 0.5 cup half-and-half
  • 6 potatoes, peeled and thinly sliced, divided
  • 0.5 cup diced onion, divided
  • 1 cup shredded Cheddar cheese, divided
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then generously butter a 9x13-inch baking dish with 1 tablespoon of butter.
  • In a skillet over medium heat, melt 1 tablespoon of butter until sizzling. Season pork chops with salt and pepper, then sear in the skillet until beautifully browned, about 3 to 5 minutes per side.
  • In a small saucepan over medium-high heat, melt the remaining 3 tablespoons of butter. Add mustard and thyme, season with salt and pepper, then whisk in flour until a thick paste forms. Gradually whisk in chicken broth and half-and-half until smooth. Cook, stirring occasionally, for about 5 minutes until the sauce thickens; then remove from heat.
  • Spread half of the potato slices and diced onion on the bottom of the baking dish. Sprinkle half of the Cheddar cheese over the potatoes. Place the pork chops on top of the cheese. Layer the remaining potatoes and onion over the pork chops. Pour the sauce evenly over everything in the dish.
  • After baking for 1 hour, generously sprinkle remaining Cheddar cheese on top of the dish. Turn the oven to broil and bake for an additional 5 minutes until the cheese is golden brown and bubbly.
