Juicy pork chops seared with pomegranate glaze, topped with seeds and parsley. Ready in just 30 minutes.
Ingredients:
  • 4 bone-in center cut pork chops, about 1-inch thick
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 tablespoons finely chopped shallots
  • 1 1/2 cups pomegranate juice
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 2 sprigs thyme
  • 1 tablespoon cold, unsalted butter
  • 2 tablespoons chopped parsley (for garnish)
  • Seeds from 1 pomegranate (for garnish)
Instructions:
  • Season the chops to perfection: Coat both sides of the pork chops generously with a sprinkle of salt and pepper.
  • Sear the pork chops in a large skillet over medium-high heat with oil until golden brown on both sides and internal temperature reaches 145°F. Transfer to a plate and cover with foil to keep warm.
  • Prepare the glaze: Remove excess oil from the pan, leaving just a thin layer. Return the pan to the heat and add shallots. Cook for 45 seconds while stirring. Deglaze the pan by scraping up any browned bits. Stir in pomegranate juice, honey, vinegar, and thyme. Cook until slightly thickened for 5 to 7 minutes. Remove from heat, discard thyme sprigs, and whisk in butter.
  • Plate the chops, drizzle the glaze on top, and garnish with parsley and pomegranate seeds.
