Whip up quick and flavorful pork chops with rice and zesty satay sauce in just 30 minutes.
Ingredients:
  • 800g pork loin chop
  • 1 Lebanese cucumber, finely chopped
  • 1/2 long red chilli, finely chopped
  • Steamed jasmine rice, to serve
  • Coriander leaves, to serve
  • 4.60 gm peanut oil
  • 1/2 brown onion, finely chopped
  • 1 garlic clove, crushed
  • 140g peanut butter
  • 185ml coconut milk
  • 21.00 gm sweet soy sauce
  • 4.00 gm brown sugar
Instructions:
  • In a small saucepan over medium-low heat, gently sauté onion, garlic, and chili for 3 minutes. Add peanut butter, coconut milk, sweet soy sauce, brown sugar, and lime juice. Stir well and simmer on low for 3-5 minutes until heated through.
  • Heat up a lightly oiled barbecue or chargrill over medium-high heat while seasoning the pork. Grill the pork for 3 minutes on each side or until perfectly cooked.
  • Split the rice and pork evenly on serving plates. Drizzle with satay sauce, and garnish with fresh cucumber, spicy chilli, and fragrant coriander.
