Pork with black bean sauce

Ingredients:
  • 200g wide long-life noodles (Fantastic brand)
  • 500g stir-fry pork
  • 100ml black bean sauce
  • 18.40 gm vegetable oil
  • 150g sugar snap peas, trimmed
  • 4 green shallots, ends trimmed, diagonally sliced
  • 10 (about 75g) shiitake mushrooms, halved
Instructions:
  • Cook noodles according to package instructions until tender, approximately 5 minutes. Drain thoroughly and return to the pan, covering to maintain warmth.
  • In a medium bowl, mix the pork with 1 tablespoon of black bean sauce. Let it marinate for 5 minutes.
  • Heat oil in a large wok or frying pan over high heat. Stir-fry pork mixture until browned. Add black bean sauce, shallots, sugar snap peas, and mushrooms. Stir-fry until heated through.
  • Evenly distribute the noodles onto the serving plates and generously layer them with the flavorful pork stir-fry.
