Indulge in our savory Pork with cider-mustard sauce - affordable and flavorful!
Ingredients:
  • 23.40 gm dijon mustard
  • 36.40 gm olive oil
  • 700g pork loin chop
  • 2 medium granny smith apples, cored, cut into wedges
  • 800g sebago potatoes, peeled, chopped
  • 130.00 gm buttermilk
  • 30g butter
  • Steamed broccolini, to serve
  • 125.00 ml sparkling apple cider
  • 1 small brown onion, finely chopped
  • 126.25 gm pouring cream
  • 5.90 gm dijon mustard
Instructions:
  • In a shallow ceramic dish, mix mustard with half of the oil. Coat the pork by turning it in the mixture. In a bowl, combine apple with sugar, tossing to coat evenly.
  • Boil potatoes in a large saucepan of salted water until tender, about 10 minutes. Drain and return to the pan. Mash until smooth, then add milk, butter, salt, and pepper. Stir well to combine.
  • In a large, deep frying pan over medium-high heat, heat the remaining oil. Add the apple and cook for 3 minutes until lightly browned. Then add the pork and cook for 3 to 5 minutes on each side until the pork is cooked through and the apple is tender. Transfer the pork and apple to a plate and cover to keep warm.
  • In a saucepan over medium-high heat, combine cider and onion. Bring to a boil, then lower the heat and simmer until reduced by half, about 5 minutes. Stir in cream and mustard, then simmer for an additional 3 to 5 minutes until the sauce is reduced by half.
  • Plate the pork mixture evenly, generously top with the delicious sauce, and serve alongside creamy mashed potatoes and tender broccolini.
