Start your day right with a hearty breakfast scramble featuring eggs, black beans, tomato, and Swiss cheese.
Ingredients:
  • 2 to 3 tablespoons Land O Lakes® Butter with Olive Oil & Sea Salt
  • 1/3 cup chopped yellow onion
  • 6 eggs
  • 1/4 cup whipping cream
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1 small plum (Roma) tomato, chopped
  • 1/4 cup shredded Swiss cheese (1 oz)
Instructions:
  • In a large skillet, gently melt butter over medium-low heat. Saute the onion in the butter, stirring occasionally, until soft and tender.
  • Whisk eggs and whipping cream in a large bowl. Pour mixture into a skillet and cook for 2 to 3 minutes until eggs start to set. Gently lift and fold the cooked edges with a spatula to allow the uncooked part to flow to the bottom of the skillet.
  • Lower the heat and gently incorporate the black beans and tomato. Cook for an additional 4 minutes until the eggs are fully cooked and everything is warmed through. Take the pan off the heat and sprinkle with cheese. Enjoy right away.
