Irresistible puffed corn snack with baked peanuts and caramel, no hulls or unpopped kernels!
Ingredients:
  • 1 (8 ounce) bag corn puffs (such as O-Ke-Doke®)
  • 1 cup salted peanuts
  • 1 cup butter
  • 1 cup packed brown sugar
  • 0.5 cup light corn syrup
  • 1 teaspoon baking soda
Instructions:
  • Preheat the oven to a toasty 250 degrees Fahrenheit (120 degrees Celsius) and unite the vibrant corn puffs with crunchy peanuts in a spacious roasting pan.
  • In a heavy 2-quart saucepan, bring butter, brown sugar, and corn syrup to a boil. Cook and stir for 2 minutes until rich and smooth.
  • Take the saucepan off the heat and mix in the baking soda until the mixture foams up.
  • Drizzle the mixture over the corn puffs and mix thoroughly with rubber spatulas. Bake in the preheated oven, stirring every 10 to 15 minutes, until the corn is crunchy when cooled, approximately 45 minutes.
  • Spread the mixture on waxed paper to cool until hardened. Break it apart into pieces and store in an airtight container for freshness.
