Elevate mashed potatoes with this gourmet casserole, perfect for Thanksgiving.
Ingredients:
  • 5 lb Yukon Gold potatoes, peeled, cut into 2-inch pieces
  • 3 teaspoons salt
  • 3 tablespoons butter
  • 3 oz Manchego or Parmesan cheese, shredded (3/4 cup)
  • 3/4 cup half-and-half
  • 2 eggs, slightly beaten
  • 1/2 teaspoon pepper
  • 2 tablespoons butter, melted
Instructions:
  • In a 5-quart Dutch oven, add potatoes and cover with water, then toss in 2 teaspoons of salt. Bring to a boil over medium-high heat and cook for 20 minutes until tender; drain. Reduce heat and return potatoes to the Dutch oven. Heat for about 1 minute on low to dry them, shaking the pan occasionally to prevent sticking. Remove from heat and mash the potatoes to your liking with a potato masher.
  • Preheat oven to 400°F and generously coat a 2 1/2- to 3-quart casserole dish with cooking spray.
  • Combine 3 tablespoons of butter, cheese, half-and-half, eggs, pepper, and the remaining teaspoon of salt with the potatoes, stirring thoroughly. Transfer the mixture to a casserole dish and brush the top with melted butter.
  • Bake for 20-25 minutes until hot and puffed. Serve right away.
