Whip up delicious nachos in just 10 minutes for a quick and satisfying dinner!
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 brown onion
  • 500g beef mince
  • 4 radishes
  • 40.00 ml red wine vinegar
  • 225g sachet fire roasted tomatoes chilli con carne cooking sauce
  • 425g can black beans, drained, rinsed
  • 1 avocado
  • 42.00 gm lime juice
  • 1 tomato
  • 100g packet lentil chips
  • 82.50 ml plain Greek-style yoghurt
  • Fresh coriander sprigs, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat oil. Chop onion and add it to the pan. Cook for 2 minutes, stirring occasionally. Add mince and cook for 4 minutes, breaking it up with a wooden spoon until browned all over.
  • Thinly slice vibrant radishes, then delicately place them in a glass bowl. Gently drizzle with tangy vinegar, toss to ensure every slice is coated, and let the flavors meld together as they sit.
  • Combine the savory cooking sauce and beans with the mince mixture, stirring gently to blend flavors. Let it simmer for 2 minutes to enhance the delicious harmony of ingredients.
  • Firstly, in a mixing bowl, combine the ripe avocado with fresh lime juice, and season generously with salt and pepper. Gently mash the ingredients together to create a rustic texture. Then, chop the tomato to add a burst of freshness to the mix.
  • Lay out lentil chips on a serving plate. Pile on the mince mixture. Add the drained radish, avocado, and yogurt on top. Sprinkle with tomato and finish with a garnish of fresh coriander before serving.
