Bake aromatic pumpkin raisin cookies to savor the flavors of fall using leftover pumpkin.
Ingredients:
  • 1 teaspoon baking soda
  • 0.5 cup shortening
  • 1 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup solid pack pumpkin puree
  • 2 cups all-purpose flour
  • 2.5 teaspoons pumpkin pie spice
  • 0.5 cup chopped walnuts
  • 1 cup raisins
  • 1 cup confectioners' sugar
  • 2 tablespoons warm water
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease the cookie sheets.
  • Cream together the shortening and sugar until silky in a medium bowl. Add the egg and vanilla, mix until light and fluffy. Incorporate the pumpkin. Combine flour, baking soda, salt, pumpkin pie spice, and cinnamon; fold into the pumpkin mixture. Lastly, gently mix in the raisins and walnuts.
  • Place heaping spoonfuls of cookie dough on the baking sheets. Bake in the preheated oven for 10-12 minutes until the edges are lightly browned.
  • Prepare the spice glaze while the cookies bake. Combine confectioners' sugar with 2 tablespoons of warm water until smooth. Mix in 1/2 teaspoon of cinnamon. Adjust consistency by adding more water if needed.
  • Once the cookies are finished baking, brush them with a delightful spice glaze before transferring them to cooling racks.
